Delightful Lemon Poppy Seed Bread! 

I am so excited to share this recipe with you now that spring is in full swing. I always crave anything citrus flavor or even in the scent. It is such a spring scent. And with this recipe, your house will smell amazing! This delightful lemon poppy seed bread is as delicious as it looks and smells.

Speaking of scents, every time I smell any scent of lemon, I instantly think of my grandparents and my father, because they would always cut fresh lemons for water. And once in a while, I remember my grandparents having lemon poppy seed bread a lot. It was one of their favorite breads, that and banana bread! It was a dessert to them. I remember my grandma pouring a cup of coffee and preparing a slice for my grandpa. They would sit in the sunroom, newspaper in hand, or the latest Reader’s Digest. I also remember it was either spring or summer. 

With that memory, I now absolutely love lemon poppy seed bread, but I never have time to make it. I recently had quite a few lemons leftover, so I finally had time to make the bread. I found this recipe years ago, that I adapted and fell in love with. It is a very easy recipe, too. My grandma would be so proud!

I made one loaf and if I could I would eat it all in one day! I’m one of those bakers who have to eat it right away and can’t stop! Anyone else like that? I mean whoever doesn’t do that, I give you props on self-control.

Lemon Poppy Seed Bread

Ingredients

For the bread

  • 1 ½ cups flour
  • 1 ¼ cups sugar
  • ¾ teaspoons salt
  • ¾ teaspoons baking powder
  • 2 eggs
  • ¾ cup whole milk
  • 1 stick plus 1 tablespoon of butter melted
  • 1 ½ tablespoons poppy seeds
  • ¼ cup fresh squeeze lemon juice
  • ½ teaspoon vanilla
  • Zest of two lemons (optional)
  • 3 mini loaf pans (I bought mine at the market)

For the glaze

  • ¼ cup lemon juice , plus more if needed
  • ¾ cup powdered sugar
  • ½ – 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°. Grease 3 mini loaf pans and set aside. Combine flour, sugar, salt and baking powder in a large bowl. In the bowl of an electric mixer combine the eggs, milk, butter, lemon juice, vanilla and zest. Slowly add the dry ingredients on low speed until combined and then on medium for one minute. Stir in poppy seeds.

  2. Pour batter evenly into the pans and bake for approximately 40 minutes or until a toothpick inserted into the middle of the bread comes out clean. Let bread cool completely. While the bread is cooling combine the lemon juice, zest and powdered sugar in a small bowl. Add more sugar or lemon as needed. Drizzle lemon glaze over the top and sides of the bread.

The bread was everything that I could have hoped for. Just simply delightful! Moist, light, full of lemon flavor with a nice tart glaze. Maybe I should make a lemon poppy seed bundt cake next time! Enjoy!!
